Eggplant Sandwich, Quick and Fresh Recipe

The eggplant sandwiches are a delicious and vegetarian recipe perfect as an appetizer, for a quick and light dinner, or even for a buffet. You already know I love eggplants, right? Well, I admit this version might seem very simple, but I guarantee they are delicious and especially super quick to make. In short, they are two slices of grilled eggplant stuffed with slices of tomato and mozzarella, just like real sandwiches.

Moreover, if you don’t have time to grill the eggplants, you can easily use frozen pre-grilled ones. And like any sandwich, you can be creative with the filling. For example, you can fill them with ham and scamorza cheese and bake them for a few minutes until the cheese has melted. Did I make your mouth water, right? Ingredients for the Eggplant Sandwiches

  • 1 eggplant
  • 1 beefsteak tomato
  • 1 mozzarella
  • extra virgin olive oil (to taste)
  • oregano (to taste)
  • salt (to taste)

  • 1 Cutting Board
  • 1 Knife
  • 7 Toothpicks wooden for appetizer

Preparation of Eggplant Sandwiches

  • First, wash the eggplant under water and dry it with a paper towel. Then, slice it into 0.39-inch thick slices and place the slices in a colander with coarse salt, alternating the layers. So a first layer of eggplant slices, the coarse salt, and so on. Let them rest for at least 30 minutes. This way the eggplant will lose its vegetation water and become less bitter.

    After the necessary time has passed, take the eggplant slices, rinse them under running water and pat them dry with a paper towel. At this point, grill them for 3 or 4 minutes on each side on a grill pan or a non-stick pan.

  • Next, slice the tomato and mozzarella and assemble your sandwiches. Take an eggplant slice, place a slice of mozzarella and a slice of tomato in the center. Season with salt, add oregano, close the sandwich with an eggplant slice, and drizzle with a little olive oil.

Eggplant sandwiches can be stored for up to one day in the refrigerator. If you need to prepare them in advance, I recommend cooking the eggplants and stuffing the sandwiches just before serving.
