Fennel and Grapefruit Salad, an incredibly simple and tasty dish, perfect for a light everyday lunch without sacrificing flavor. I don’t know if I’ve ever told you, but pink grapefruit is one of my favorite citrus fruits. Its color, its slightly bitter and sour taste make it the perfect ingredient for this recipe. Besides grapefruit and fennel, of course, I added raisins and feta, which you can also substitute with fresh cheese. A combination of flavors that makes this salad super delicious. Fresh, aromatic, and a boon for the winter because it allows you to fill up on fiber and vitamins while enjoying raw vegetables. Steps

  • To prepare the fennel salad, first soak the raisins in a bowl with cold water for 10 minutes. Next, clean the fennel by removing the fronds and the more damaged outer leaves. Wash the fennel under water to remove any dirt and slice it thinly. Then peel the pink grapefruit and cut it into thin slices. Also dice the feta after drying it with a paper towel.

    Place arugula, fennel, grapefruit slices, and diced feta in a bowl. Add the drained raisins and season with salt and pepper.
