Gluten-Free Couscous and Oat Granola

The couscous and oat granola is a variation of homemade muesli, gluten-free and perfect for a healthy, light, yet flavorful breakfast. A very simple recipe to make, where the ingredients used are: couscous, oat flakes, coconut beverage, nuts, and honey.

To prepare it, you can of course replace the coconut beverage with another of your liking: almond, soy, or oat. Additionally, for this recipe, I used whole oat flakes, but if you prefer, you can prepare the recipe using regular ones.

Ingredients

  • 4 oz cooked couscous
  • 2/3 cup coconut beverage
  • 1/4 cup honey
  • 1/2 cup oat flakes
  • 1/4 cup cashews
  • 1/4 cup unsalted pistachios (toasted)

Steps

  • To prepare the couscous and oat granola, first put the couscous in a bowl. Then heat the coconut beverage, without boiling it, and pour it into the bowl with the couscous. Stir, cover with plastic wrap, and let it rest until the couscous has absorbed the liquid part. It will take about 10 minutes.

    In the meantime, roughly chop the nuts. I used toasted unsalted pistachios and cashews, but you can use any nuts you prefer. Then take back the bowl, fluff the couscous with a fork, and add the oat flakes, chopped nuts, and honey.

    Mix well and spread the oat and couscous muesli on a baking tray measuring 16×12 inches, lined with parchment paper. Bake in a preheated oven at 350°F for 30 minutes with static function, stirring halfway through cooking.

  • Once the muesli is golden and crunchy, remove it from the oven and let it cool. Then pour it into a glass jar with a lid. The oat and couscous granola is ready to enjoy with milk, tea, or yogurt for breakfast or a snack.

The oat and couscous muesli can be stored in a cool, dry place, in a glass jar with a lid, for 1 week.
