Gnocchi with shrimp and mushrooms, a unique first course that is simple to prepare and delicious. Perfect to serve when hosting dinner guests on special occasions. A truly easy recipe to prepare. I took inspiration from my recipe for trofie with shrimp and lemon, which is equally simple and quick to make.

Also for this recipe, the only downside will be cleaning the seafood. Anyone who knows me knows that I don’t particularly enjoy this step. However, I guarantee that for this recipe, it was worth it to enjoy all the goodness of this first course.

If you want, you can also make it easier by getting help from your trusted fishmonger, but you will then need to consume it immediately or within the day. I cooked it the next day, so I preferred to clean it at home.

The combination of mushroom flavor and shrimp creates a winning mix of tastes! When I tasted these gnocchi, their flavor reminded me of the scent of the forest and the sea. To the frozen porcini mushrooms and shrimp, I then added some cherry tomatoes for a touch of color, but if you prefer, you can also omit them.

Ingredients

  • 9 oz potato gnocchi
  • 8 oz shrimp
  • 7 oz porcini mushrooms (frozen)
  • 7 oz cherry tomatoes
  • 1 clove garlic
  • 2 tbsp extra virgin olive oil
  • 3.5 tbsp dry white wine
  • salt (to taste)
  • pepper (to taste)
  • chopped parsley (to taste)

Steps

  • First, focus on cleaning the shrimp. With the help of a pair of scissors, remove the legs and cut along the back of the shrimp. Then remove the black vein with a toothpick: the crustacean’s intestine. Remove the head, rinse them thoroughly under water, and drain them.

  • Clean a garlic clove and pierce it with a toothpick. This way, it will be easier to remove once the sauce is cooked. Sauté the garlic clove in the non-stick pan with the oil, and as soon as it is golden, add the previously cleaned shrimp.


    Cook them over high heat for a few minutes and deglaze with the white wine, allowing the alcohol to evaporate. Then add the frozen mushrooms and season with salt and pepper. In place of frozen mushrooms, you can also use fresh ones, after cleaning them thoroughly. To clean them, you can read here.


    Cover with a lid and cook for 3 minutes over low heat. Meanwhile, wash the cherry tomatoes and cut them in half. Add them to the pan with the rest of the sauce, season with a little salt, and continue cooking, still covered and over low heat, for another 7 minutes.


    In the meantime, cook the gnocchi in plenty of salted water. As soon as they float, scoop them out with a slotted spoon and transfer them to the pan with the sauce. Add a couple of tablespoons of the gnocchi’s cooking water and toss them in the pan for a few minutes over high heat.
