Once ready and cooled, they are then decorated with a white glaze made with powdered sugar and lemon. The secret to achieving a perfect glaze is to add a little lemon juice at a time, to get a very thick mixture that makes our ghosts look almost real.

Ingredients
- 3 carrots
- 2 eggs
- 2/3 cup sugar
- 3 tbsps vegetable oil
- 1 2/3 cups all-purpose flour
- 1/2 packet baking powder
- 3/4 cup powdered sugar
- 2 tsps milk (or lemon juice)
- 24 sugar eyes

Steps
First, clean the carrots and rinse them well under water. Dry them with a paper towel and transfer them into a blender glass with the oil. Then blend until a smooth cream is obtained.
In a bowl, beat the eggs with the sugar using a hand whisk until they become pale. Add the carrot cream and mix until well combined. Then incorporate the flour and baking powder, continuing to mix with the whisk until a smooth, lump-free batter forms.
Subsequently, fill the muffin cups 2/3 full with the batter and bake in a preheated static oven at 356°F (180°C) for 30 minutes, using a toothpick to check doneness before taking them out of the oven.
Once the baking time is up, remove the muffins from the oven and let them cool. Meanwhile, prepare the glaze by mixing the sugar with the milk in a bowl. Add a little milk at a time, always stirring, until a fairly thick consistency is reached.
When the muffins are well cooled, remove them from the mold and dip the top in the previously prepared glaze. To achieve a less transparent effect, I dipped the muffins twice, waiting a couple of minutes between each operation. Finally, place the sugar eyes on each treat.
The Halloween muffins are ready! Let the glaze dry well by placing them on a wire rack before serving.
Variations and tips for Halloween muffins
The muffins can be stored in a cool and dry place on a tray covered with aluminum foil for up to two or three days. As an alternative to carrots, you can use 6.5 oz (185 g) of raw pumpkin.
