Yes, indeed, all the ingredients are put in the blender, a few steps with the hands to compact the dough and you can create them in the shape you prefer. I made them round because the first time I prepared and tasted them, they reminded me of the flavor of a famous snack brand that I obviously cannot mention. However, you can also make them rectangular, simply cutting the dough into diamonds.

  • 3 tbsps extra virgin olive oil
  • 1.76 oz emmenthal (in one piece)
  • 1 oz grated parmesan
  • 1/3 cup sparkling water
  • 0.28 oz instant yeast for savory preparations

  • 2 tsp water
  • 2 tsp extra virgin olive oil

Steps

  • First, cut the cheese into cubes so it can be better chopped and mixed with the other ingredients. Then put the flour, cheese, oil, salt, sparkling water, and yeast in a blender and blend until you obtain a fairly smooth mixture.

    Then transfer the dough to a lightly floured work surface and knead until you get a smooth and compact dough.

    Roll it out to a thickness of 1 or 2 mm with the help of a rolling pin and cut out discs with the round cookie cutter. Alternatively, you can also cut rectangles with a knife. In short, you can create the shape you prefer for these savory cheese cookies.

    Place them on an oven tray lined with parchment paper, spacing them apart, and, with a wooden skewer stick, prick the surface. Then mix the water and oil in a bowl to create an emulsion and brush the surface of the crackers.
