The lemon brownies are easy and delicious treats, perfect to serve for breakfast or as a snack with a cup of tea. They are essentially a variation of chocolate brownies, soft and with a citrus lemon flavor. These treats are typical of American cuisine, named so because of their dark color as they’re usually made with dark chocolate.
Today, however, I am sharing my version, which is a twist on the classic recipe, where I replaced the chocolate with the juice and zest of a lemon. This is why I suggest using untreated lemons. Naturally, you can enrich these cookies by adding nuts, or if you prefer, white chocolate. Cut into cubes after cooking, they will also make a great dessert for a dinner with friends and family. Ingredients
- 3 eggs
- 2/3 cup sugar
- 1/2 cup butter (melted and cooled)
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1 lemon (juice and zest)
- powdered sugar (as needed)

- Non-stick baking pan 8×8 inches
Steps
First, melt the butter in the microwave or in a small saucepan and let it cool. Then break the eggs into a bowl, add the sugar, and beat the two ingredients very well with an electric mixer for at least 10 minutes. It should be light and fluffy.
Then add the melted and cooled butter and continue working the mixture with the electric mixer until it is combined. Then incorporate the flour and baking powder, continuing to work with the electric whisks.
Separately, squeeze the juice from an untreated lemon and obtain the zest. Add it to the batter, still mixing with the whisks. Line a square pan with parchment paper and pour the batter, spreading it evenly over the entire pan. Bake the lemon treats in a preheated static oven at 350°F for 30 minutes, doing the toothpick test to check the degree of baking.
After the baking time, remove the cake from the oven and let it cool. Then remove it from the mold and cut it into cubes. Generously dust with powdered sugar and serve.
