Ingredients
- 1 1/2 cups cherry tomatoes
- 1 clove garlic
- 0.7 oz capers
- 0.35 oz parsley (fresh)
- 0.35 oz basil (fresh)
- 3 tbsps extra virgin olive oil
- salt (to taste)
- pepper (to taste)
- 0.9 oz pine nuts
Tools
- Blender
- Cutting Board
- Knife
- Pan
Steps
First, wash the cherry tomatoes very well and dry them with paper towels. Then cut them in half if they are small, or into quarters if they are slightly larger. Arrange them side by side on a plate.
Clean the basil and parsley and place them in the blender cup. Then add the peeled garlic clove and capers. Season with salt and pepper and add the oil, as much as needed to get a thick and homogeneous sauce.
Distribute the freshly prepared sauce over the cherry tomatoes and place in the fridge to marinate for 30 minutes. Meanwhile, place the pine nuts in a non-stick pan and toast them for a few minutes, being careful not to burn them. To help, swirl the pan. Then let them cool slightly to avoid burning yourself and chop them coarsely with a knife.
Take the tomatoes from the fridge, distribute the toasted and chopped pine nuts, and serve.
