The meat skewers in air fryer are a quick and tasty second course, ideal for an everyday dinner or with friends. A variation on the recipe for veal skewers gratin in the oven, but for today’s version, they are cooked in the air fryer.
Preparing them is very simple. For this recipe, I used turkey meat, which, after cutting it into cubes, I let marinate for a couple of hours in an emulsion prepared with oil, paprika, mustard, and aromatic herbs.
After the resting time, I skewered the meat on wooden skewers, alternating it with sausage, bell pepper, and bay leaves. You can obviously replace the bell pepper with other seasonal vegetables of your choice. Air fryer cooking is perfect for this period. - 14.5 oz turkey breast (in one piece)
- 12.9 oz sausage
- 1 red bell pepper
- bay leaves (fresh to taste)
- 1 tbsp extra virgin olive oil
- 1.5 tbsp mustard
- smoked paprika (to taste)
- rosemary (chopped to taste)
- sage (chopped to taste)
- marjoram (chopped to taste)

Steps
Cut the piece of meat into 0.75-inch cubes. Alternatively, you can have your trusted butcher do it. Then put the oil with mustard, chopped aromatic herbs, paprika, and salt in a bowl. Mix and add the previously cut turkey cubes. Cover with plastic wrap and let rest in the fridge for at least 1 hour. I recommend marinating the meat for as long as possible for better results.
In the meantime, take care of the other ingredients. Cut the sausage into 0.75-inch pieces and clean the bell pepper. Wash it under water, dry it, and remove the stalk, seeds, and inner filaments. Then also cut the bell pepper into 0.75-inch chunks. It is important that the sausage, meat, and vegetables are all of the same size for even cooking.
Subsequently rinse the bay leaves and dry them, then assemble the skewers. Thread a piece of sausage, a piece of bell pepper, a piece of meat, and a bay leaf folded in half onto each skewer. Repeat the same ingredients for a second time and place the skewers in the fryer basket.
Cook at 375°F for 20 minutes, turning them halfway through. The turkey skewers in the air fryer are ready! Serve them immediately accompanied by potatoes or a salad.
