- 4 slices mozzarella for pizza
- 1 tbsp tbsp extra virgin olive oil
- chives (to taste)

Steps
First, wash the cherry tomatoes and quarter them. Then transfer them to the pan with the oil, beaten eggs, and chopped chives. Season with salt, distribute the mozzarella slices, and cook over low heat with the lid on for 15 minutes, occasionally detaching the edges of the omelet with a spatula.
The omelet with cherry tomatoes and chives is ready! Serve it hot and cheesy or cold.
Variations and Tips
The egg casserole with chives and cherry tomatoes can be kept in the refrigerator for one or two days in a covered container. You can replace the chives with fresh or frozen spinach and enrich it with chopped parsley.
