Pakora, Indian Vegetable Fritters

The Pakora is a delicious Indian fried dish, often served as an appetizer or as finger food. It’s a very simple and quick recipe. To make it, start with one or two vegetables, such as onions, zucchini, spinach, cauliflower, carrot, or tomato. These ingredients are then dipped in a batter made with chickpea flour and subsequently fried. An aromatic street food that is often accompanied by special sauces. Additionally, the addition of spices like turmeric and curry gives this dish a unique flavor. Besides the vegetable variety, there is also one made with Paneer: a typical soft Indian cheese.

Today I’m offering you my version with vegetables, using carrot and onion. After grating them, I added them to a batter made with chickpea flour, rice flour, and very cold sparkling water. These fritters are also perfect for celiacs because they are gluten-free. You can, therefore, get creative with this recipe and use the vegetables you like the most. Ingredients

  • 1 carrot
  • 1 white onion
  • 3/4 cup chickpea flour
  • 1/3 cup rice flour
  • 2/3 cup sparkling water (cold)
  • 1 teaspoon curry
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon smoked paprika
  • salt (to taste)
  • seed oil (for frying)

Steps

  • First, clean the carrot by removing both ends, peel it with a peeler and rinse it under water. Also remove both ends of the zucchini after washing it and grate them into a bowl with a coarse grater.

    Next, add the chickpea flour, rice flour, spices, salt, and very cold sparkling water. Then, mix with a whisk until you obtain a smooth batter without lumps. You should have a soft but not too liquid mixture.

    Separately, heat oil in a pan and when it has reached the right temperature, use 2 spoons to scoop some batter, drop it into the oil, and fry the fritters on both sides.

  • When the fritters are golden on both sides, drain them on absorbent paper and serve.

Variations and Tips

Pakora is a fried appetizer that should be consumed immediately while still hot. You can store them for up to one day at most.

For a lighter version, you can bake the fritters in the oven at 356°F (180°C) for 10 to 15 minutes. If you prefer, you can use only chickpea flour.
