Porcini Mushroom Crostini, a tasty and quick appetizer to prepare, perfect to start a lunch or dinner or to accompany an aperitif. The recipe is very simple and you can use either fresh or frozen porcini mushrooms. The other day I went to visit my mom in the mountains with Francesca and Giorgia, and a dear friend gave me a beautiful basket of mushrooms and a piece of special cheese, taken from a local shepherd.

- 7 oz porcini mushrooms (weight of cleaned mushrooms)
- 4 slices whole grain multi-cereal bread
- 1.5 oz cheese (aged like Gruyère)
- 2 tbsps extra virgin olive oil
- 1 clove garlic
- parsley (to taste)
- salt (to taste)
- pepper (to taste)

Steps
First, clean the mushrooms. Remember, do not wash them under water because they act like sponges and would absorb it, compromising the recipe. You just need a little patience for this operation. Alternatively, you can also use frozen ones.
Brush them with an old toothbrush to remove excess dirt. Then, with a small knife, remove the impurities that remain on the mushroom stems and then wipe them with a damp cloth.
Once done, you can slice them. Then clean the garlic clove and sauté it in a pan with oil. Add the mushrooms, season with salt and pepper, and cook on low heat with a lid, stirring occasionally, for 8/10 minutes. During cooking, they will release water and a delicious sauce will form. Prepared this way, they are also excellent for dressing a plate of tagliatelle, but we will make them even more delightful.
Cut a piece of bread into slices about 0.75 inches thick. Grease a pan with a little oil and toast the bread slices on both sides for a few minutes, being careful not to burn them. Once they are golden, distribute the mushrooms previously sautéed in the pan. Then add a slice of cheese and place them in the air fryer at 350°F for 2 to 3 minutes, until the cheese is melted.
The mushroom crostini are ready to be served as an appetizer or aperitif with friends and family.
