Ingredients
- 1 1/2 cups Carnaroli rice
- 12 oz broccoli
- 1/2 onion
- 2 tbsps extra virgin olive oil
- 0.9 oz anchovies in oil
- 1 glass white wine
- 6 1/2 cups vegetable broth
- salt (to taste)
- 2 tbsps butter
- 2 tbsps grated Parmesan cheese

Steps
First, prepare the vegetable broth and set it aside. Then clean the onion and chop half of it. Also clean the broccoli by cutting the stalk into pieces. I used them in the risotto, but you can put them in the broth with the other vegetables. Then divide the broccoli into florets and rinse them under water.
Next, sauté the onion in the pot with the oil and add half the anchovies from the total. Set aside the remaining ones for the final decoration. Also add the broccoli stalk pieces and sauté in the pot over low heat until the onion is golden. Then add the rice and toast it for a few minutes on high heat. Then deglaze with the white wine, letting the alcohol evaporate.
Then add the broccoli florets, the hot broth, and adjust the salt. Close the pot and bring it to maximum power. From the start of the whistle, cook for 4 minutes. Obviously, cooking times are relative and vary depending on the type of pressure cooker you have.
After the cooking time, gradually release the steam, open the pot, stir in butter and grated cheese, and mix.
