- 1 packet vanillin
- 3.5 tbsp rice oil
- 3 tbsp rice milk
- 1 1/2 cups rice flour
- 3/4 cup potato starch
- 1 1/2 tsp baking powder
- powdered sugar (q.b.)

Steps
First, prepare the shortcrust pastry. Place the egg, oil, and plant-based milk in a bowl. I used rice milk, but you can use any other plant-based beverage of your choice.
Mix with a spoon until the ingredients are well combined. Then add the vanillin, flour, starch, and baking powder, and knead until you get a smooth and homogeneous dough. This dough will be quite crumbly, very similar to the consistency of salt dough.
Wrap the shortcrust pastry in plastic wrap and let the dough rest in the refrigerator for 30 minutes.
After the resting time, take the dough and roll it out with a rolling pin to a thickness of 0.4 inches between two sheets of parchment paper, or on a lightly floured surface. Use a cookie cutter to form the cookies.
Arrange the cookies next to each other on a baking sheet measuring 11.8×15.7 inches lined with parchment paper. Sprinkle with powdered sugar and bake in a preheated oven at 356°F for 25 minutes using the static function.
After the baking time, remove the cookies from the oven and let them cool before dipping them into a cup of tea or milk.
