Burrata sandwich, a tasty finger food ideal as a main dish, when you want something quick and genuine to prepare at home. A vegetarian variant of my shrimp burger with sun-dried tomatoes and rocket recipe.
Making a burger at home is very simple! For this recipe, I took advantage of using pre-made burger buns because, to be honest, I had little time and willingness to knead. However, you can prepare the basic recipe for charcoal burger buns, a variant of the classic ones and very easy to prepare.
To fill my sandwiches, I used oven-cooked buns, burrata, and pesto. The result will be a fresh and appetizing main dish. A perfect combination of intense flavors from homemade pesto and burrata, alternating with the sweet and at the same time acidic taste of oven-roasted cherry tomatoes. - 3 burrata
- 1.5 tbsp butter
- 1 cup basil
- 1 clove garlic
- 0.7 oz pecorino (grated)
- 0.5 oz grated parmesan
- 0.9 oz pine nuts
- coarse salt (to taste)
- 1.5 oz extra virgin olive oil
- 9 oz cherry tomatoes
- 4 cloves garlic
- 1 oz extra virgin olive oil
- salt (to taste)

Steps
First, wash the cherry tomatoes thoroughly and dry them with paper towels. Then, place them whole in a baking dish, add the peeled garlic cloves, olive oil, and season with salt. Bake in a preheated oven at 392°F for 25 minutes.
Meanwhile, prepare the pesto. Wash the basil leaves thoroughly, dry them with kitchen paper, and place them in the blender jar. Add the peeled garlic clove, grated Pecorino and Parmesan cheese, a few grains of coarse salt, pine nuts, and olive oil. Blend until you get a thick and homogeneous cream.
Now, let’s prepare the sandwich. Cut the burger bun in half and spread a knob of butter on both halves. Heat a non-stick pan and toast the bread for a few minutes, just until the interior becomes crispy.
Remove the bread from the heat and spread a tablespoon of pesto. Place the burrata in the center and, with the help of a knife, cut it in half. Then add the oven-roasted cherry tomatoes.
Close with the other half of the bread and serve. The burrata sandwich is ready! Serve it with oven-baked potatoes or classic french fries.
