- 2.5 oz diced speck

Steps
First, wash the apricots and dry them with paper towels. Then cut them in half and remove the pit. Separately, sauté the speck in a non-stick pan without adding oil. Let it sauté over low heat until it becomes crispy and reaches an amber color. Meanwhile, in a bowl, mix the cheese with chopped chives, salt, and pepper until you obtain a creamy and homogeneous mixture.
Then put the cheese cream into a piping bag and fill the apricot cavities. As an alternative to the piping bag, you can fill the apricots using two teaspoons. Form quenelles and place them in the apricot cavities. Then add some previously sautéed speck and some honey
