Single-serving Yogurt and Peach Semifreddo

Yogurt Semifreddo, a delicious spoon dessert perfect as an after-meal treat. You know when you finish lunch and you still have that irresistible craving for something sweet, fresh, and delicious? This single-serving dessert is just the right thing! And then, just as the word “single-serving” suggests, there will be no guilt. In fact, you might even want to have another one.

To make it, you can use plain yogurt, as in my recipe, or replace it with fruit yogurt. Otherwise, you can also use Greek yogurt, like in my Greek yogurt and raspberry cups. Or you can replace it with ricotta as I did for my ricotta and strawberry mousse.

The fruit I chose is peach, but you can clearly use other types of fruit you prefer. Well, I would say this is a very versatile recipe and especially very useful if you have some ingredients expiring and don’t know how to use them.   • 7 oz Digestive biscuits
  • 1/2 cup butter
  • 1 cup heavy whipping cream
  • 1/2 cup plain yogurt
  • 5/8 cup vanilla powdered sugar
  • 1 peach

Preparation of the Yogurt Semifreddo

  • Preparing the yogurt and peach semifreddo is very easy. First, melt the butter in the microwave for a few seconds, or on the stove in a saucepan. Then, blend the biscuits in a mixer and pour them into a bowl. Also add the melted butter and mix well until the liquid fat is incorporated into the biscuits and set aside.

    Now whip the cold cream from the refrigerator together with the yogurt and powdered sugar until you get a smooth and fluffy mixture. Then transfer the cream into a piping bag. Then wash the peach under water and dry it with paper towels. Cut it in half, remove the pit, and slice it thinly.

    Now fill the small cups: put a couple of tablespoons of the biscuit and butter mixture and arrange some peach slices, placing them on the sides of the cup as in the photo. Then add the cream with the whipped cream and yogurt.

  • Add a couple of peach slices rolling them over themselves in the center and place in the refrigerator to rest for 30 minutes. The spoon dessert with yogurt and peaches is ready to be enjoyed.
