Skyr mousse with granola and grapes, perfect for a healthy and nutritious breakfast or snack. A no-cook recipe that you can prepare in just a few minutes and even make in advance, perhaps the night before for breakfast. Have you heard of skyr? Well, neither had I, or rather not until the other day when I accidentally bought it, mistaking it for Greek yogurt packaging. Francesca had indeed asked me to get some Greek yogurt for an alternative breakfast. Well, by mistake I picked up two containers of skyr, only realizing it once I got home. Would you go back to the supermarket to exchange it? Not really! I used it to make this delicious yogurt cream cup, even though it’s a bit different from regular yogurt and Greek yogurt.
Skyr is actually a dairy product, lean and soft, with a taste and appearance very similar to yogurt, but more acidic and typical of Icelandic cuisine. Much richer in protein and lower in fat, this yogurt is usually used by those who need this type of diet: more protein and less fat. I must confess that even on its own it’s delicious to me, but enriched with granola and grapes, as in my recipe, it’s even better. Of course, you can use the fresh fruit you prefer, but given the season, I wanted to try it adding some grapes. I then added half a teaspoon of honey, but you can also omit it if you prefer. And now, I would say it’s time to go to the kitchen together because the skyr mousse with granola and grapes will be ready in a click!

Ingredients
- 5.3 oz skyr
- 1 tsp honey
- 1/3 cup muesli (or granola)
- 3.5 oz white grapes (weight of cleaned fruit)

Steps
First, wash the grapes thoroughly under water and dry them with paper towels. Then cut them in half, leaving some aside for garnish. In a bowl, put the skyr, add the honey and mix with a spoon. Then place a couple of tablespoons at the bottom of a jar or bowl.
Next, add the cut grapes and granola and cover with more yogurt cream. Finally, decorate with additional granola and a few grapes you set aside.
The yogurt cream with muesli and white grapes is ready! Cover it with plastic wrap and store in the fridge, or enjoy this delight right away!
