Ingredients

  • 1 roll puff pastry
  • 1 cup strawberries
  • 3/4 + 2 cup (2 tbsp) cold heavy cream for whipping
  • 1/4 cup powdered sugar
  • 1 egg
  • granulated sugar (to taste)
  • powdered sugar (to taste)
  • mint (to taste)

Steps

  • First, unroll the puff pastry and cut it into 9 rectangles. Place them on a rectangular baking sheet lined with parchment paper, spacing them apart. You can also use the parchment paper included with the puff pastry package.

    Make cuts with a knife on the two opposite sides, staying 1 cm (about 3/8 in) from the tips and edges. Next, braid the two cut parts by bringing each strip to the opposite side. Neaten the edges and corners and brush the surface with the beaten egg. Then sprinkle the surface with sugar and bake in a preheated oven at 356 °F (fan) for 25 minutes, or until the surface is golden-brown.

  • As soon as the puff pastry bases are baked, remove them from the oven and let them cool. In the meantime, using electric beaters, whip the cold cream from the refrigerator with the powdered sugar until you obtain a smooth, homogeneous cream. Meanwhile, wash the strawberries, remove the green tops and cut them into slices. Transfer the whipped cream into a piping bag and fill the puff pastries. Then add some of the previously cut strawberries on top.

  • Finally, add a few mint leaves and dust with powdered sugar.

Storage and tips for the strawberry puff pastries

You can prepare the puff pastry bases in advance, storing them in a cool, dry place for 1 or 2 days, covered with a glass dome. When ready to serve the dessert, fill and decorate with cream, strawberries, mint leaves and powdered sugar.
