- 1 black oval eggplant
- 2 round tomatoes
- 1.5 tbsp extra virgin olive oil
- salt (to taste)

Steps
To prepare the vegetable tian, first clean the vegetables. Wash the eggplant and tomatoes under water and dab them with paper towels. Then, remove the stem from the eggplant and subsequently slice it into 1/16 to 1/8-inch thick slices. Similarly, slice the tomato and arrange the vegetables in a circular pattern in a baking dish.
Season with salt, add pepper and herbs, and drizzle the oil over the top. Bake the vegetable dish in a preheated static oven at 350°F for 20 minutes.
The vegetable tian is ready! Serve it hot, warm, or cold to accompany meat and fish main courses.
Variations and Tips for Summer Vegetable Tian
The summer vegetable tian can be stored in the refrigerator for up to one or two days, in an airtight container. It is thus possible to prepare the vegetable dish in advance.
