Super Soft Coconut and Chocolate Muffins

Coconut and chocolate muffins, a winning and delicious combination for everyday breakfast and snacks. The recipe is very simple and butter-free, perfect for those who want a light yet tasty treat. I made these muffins because Giorgia told me one afternoon that she would have to bring them to school the next day to celebrate Christmas. It’s true, they have little to do with Christmas, but they are very easy to make, cute for a birthday party, and, most importantly, they are super tasty. Made with milk, flour, shredded coconut, seed oil, and lots of chocolate chips, these soft coconut and chocolate muffins will be ready in a click!

Ingredients

  • 2 eggs
  • 4.4 oz sugar
  • 1 cup milk
  • 1.25 cups shredded coconut
  • 2 cups all-purpose flour
  • 1 packet baking powder
  • 3 tbsps vegetable oil
  • 0.5 cup chocolate chips

Steps

  • To prepare the coconut and chocolate muffins, put the eggs, milk, and oil in a bowl and mix with the whisk. Then mix the flour, baking powder, and shredded coconut in another bowl and combine all the dry ingredients with the liquids. Mix again, still with the whisk, until you get a smooth batter.

    Then add the chocolate chips and fold them in with a spoon or spatula. Pour one or two tablespoons of batter into the muffin tin, where you have previously placed the paper liners. Be sure not to fill them too much and leave some room from the edges because they will rise during baking.

  • Bake the muffins in a preheated oven at 356°F with static function for 35 minutes. Obviously, baking times are relative, as they depend on the type of oven you own. Always do the toothpick test, which should come out dry. Sprinkle with powdered sugar and serve.
