Ingredients
- 9 oz tofu
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- lemon zest (to taste)
- 1 tsp sugar
- 1 peach
- 1 cucumber
- 1 Tropea red onion
- 1.5 tbsp apple cider vinegar
- 1.5 tbsp extra virgin olive oil

Steps
First, take the tofu out of the package and pat it dry with paper towels. Then cut it into cubes and place it in a bowl. In a small bowl, mix the soy sauce with the lemon juice, washed and untreated lemon zest, and the sugar. Alternatively, you can use honey instead of sugar if you prefer.
Mix well and pour the marinade over the tofu in the bowl. Mix again so that it blends perfectly with the marinade. Cover with plastic wrap and let it rest for 30 minutes.
Meanwhile, clean the onion and slice it thinly. Put it in a bowl, add the vinegar, and mix. Cover this bowl with plastic wrap and let it rest for 30 minutes. This step will make the onion more digestible.
In the meantime, clean the cucumber. Remove the ends and peel it with a peeler. Then slice the cucumber into not too thin slices, salt it and set aside. Now take the tofu and thread 3 pieces onto appetizer toothpicks. I used the small ones, but you can also use slightly longer ones, adding a few more pieces.
Heat a non-stick pan, add a little oil, and then the skewers without the marinade. Brown for a few minutes over high heat on all sides, and when the tofu is well browned, add the marinade. Let it cook for a few more moments over low heat until the marinade has thickened.
Take the onion and squeeze it very well. Then arrange the skewers on a plate, add the onion, cucumber, and the washed and sliced peach. If you prefer, you can season the cucumbers with a little salt and oil. A great main dish to serve both hot and cold.
Storage and tips for tofu skewers
The tofu skewers can be stored in the refrigerator for 1 or 2 days in a container with a lid.
