To tell you the whole truth, this type of vegetable was a hit with the whole family, so since for once I managed to get everyone to agree, why not use it to prepare this delicious first course? For this recipe, in fact, in addition to monk’s beard, I used trofie which cooked together with the vegetable.
For the seasoning, on the other hand, shrimp and cherry tomatoes, but you can also use tuna, or ricotta. Obviously for me who doesn’t particularly like cleaning fish, strictly with already cleaned shrimp. If I have the opportunity to find them on sale, I’m certainly not going to miss out on this opportunity!

Ingredients
- 8.5 oz trofie (fresh egg)
- 4.4 oz monk's beard (cleaned weight)
- 7 oz shrimp
- 7 oz cherry tomatoes
- 1.5 tbsp extra virgin olive oil
- 1/3 cup dry white wine
- salt (to taste)
- pepper (to taste)

Steps
First, clean the monk’s beard by removing the root. Then wash them very well under water to remove soil residues and drain them. Cook the monk’s beard in plenty of salted water for 6 minutes. The cooking time I wrote above is partial because half has to be cooked alone, while the rest of the time is together with the pasta. Therefore, adjust according to the cooking times indicated on the pasta package. Being fresh, it has very reduced cooking times compared to the vegetable, which instead requires a few more minutes.
Clean a clove of garlic, crush it with a garlic press and brown it for a few moments in the pan with the oil. Add the washed and drained shrimp and cook them over high heat for 1 minute. Then deglaze with the white wine and let the alcohol evaporate.
Clean the tomatoes, cut them in half, and add them to the pan with the fish. Season with salt and pepper and cook over low heat for 6 minutes, with the lid on. Once cooked, they will release their vegetation water and form the right seasoning for the pasta.
Drain the trofie and monk’s beard keeping some cooking water aside and transfer them to the pan with the seasoning. Sauté over high heat for a few minutes, stirring and adding a few tablespoons of pasta cooking water if necessary.
The trofie with monk’s beard and shrimp are ready! Add another sprinkle of pepper if desired and serve.
