Tips and Storage

– The dough consistency is very important for the success of zeppole and, more generally, choux pastry. If you have medium-large or large eggs, use four instead of five, please.

– As you might guess, the choux pastry recipe I’ve given you here for the zeppole is the same one you can use if you want to make fabulous cream puffs.

– Zeppole di San Giuseppe can be stored in the refrigerator for a couple of days.
