Crispy baked fries are a side dish that’s incredibly easy and quick to prepare. In just ten minutes, they’ll be ready to bake!
If you follow the few steps and tips I’ll give you throughout the recipe, you’ll see how crispy on the outside and soft on the inside they are, dry and flavorful. Truly delicious.. and perfectly cooked even though you don’t need to dip them in boiling water for a few minutes as I usually see done 😉

- 2 potatoes (large)
- 1 tablespoon all-purpose flour
- 1 tablespoon breadcrumbs
- 1 tablespoon grated Parmesan cheese
- to taste extra virgin olive oil
- to taste corn flour
- to taste rosemary
- to taste salt

Steps for making CRISPY BAKED FRIES
1. First, peel the potatoes. Cut them into strips that are fairly thin, just under half an inch thick (I recommend watching the short video above to follow this step better).
2. Immerse the fries in a bowl with plenty of cold water and let them soak for a few minutes, changing the water in the bowl once.
After about three minutes, drain and dry them as best as you can with paper towels or a clean cloth.
3. Once well dried, place your fries in a bowl (the same one used earlier to rinse them is fine, just dry it a little before using it).
Add the flour and mix.
Then add the oil, breadcrumbs, Parmesan, and rosemary, and mix again very well.
4. Place the fries on a baking sheet lined with parchment paper, making sure the fries don’t overlap (otherwise, they won’t be nice and crispy).
Sprinkle them with a little more breadcrumbs and corn flour (this will also help make the fries crispy once cooked); add a drizzle of oil (optional) and bake in a static oven at 356°F for about 35 minutes.
As soon as they are out of the oven, sprinkle them with fine salt to taste.
5. And here’s your CRISPY BAKED FRIES ready! I must say, in my opinion, there’s no comparison with the frozen fries you buy to cook in the oven. Let me know if you agree 🙂
Tips and Variations
Of course, you can season your crispy baked fries with the aromatic herbs and spices you like the most; you can also add, for example, some sweet or spicy paprika.
I recommend enjoying your fries immediately, as they tend to lose their crispiness as they cool, although they are still great.
