SAVORY PANETTONE

Have you heard of the 7-jar cake?

Well, to create this SAVORY PANETTONE, I used this method to make the preparation even more immediate!

This recipe does not require any resting or rising time, just pour all the ingredients into a large bowl, mix, and pour into the panettone mold that will be immediately placed in the oven.

As you can see from the photo, this savory panettone is very eye-catching because it resembles the classic sweet one, especially thanks to the black olives distributed on the surface before baking.

It is, more precisely, a savory cake filled with salami, black olives, and mild provolone, but customizable with the ingredients you like best.

Really super soft and perfect to serve as an appetizer during the Christmas holiday season before the main courses.

As you will see, in the list of ingredients, I provide both the quantities in jars and the quantities in grams so you can choose the method you like best to prepare everything you need.

Ingredients to make the SAVORY PANETTONE

As I mentioned in the introduction to the recipe, to make your savory panettone you can use a 125 g yogurt jar as a measuring unit.

For your convenience, and for completeness, below in the ingredient list, I provide you with both the jar measurements and the corresponding weight in grams.

  • 3 jars all-purpose flour (heaped, 300 g / 10.5 oz)
  • 1 jar plain yogurt (125 g / 4.4 oz)
  • 1 jar milk (100 ml / 0.4 cups)
  • 1 jar sunflower oil (100 ml / 0.4 cups)
  • 1 jar grated Parmesan cheese (3 tablespoons)
  • 3 eggs (medium)
  • 1 packet instant yeast for savory preparations
  • 70 g black olives (pitted, 2.5 oz)
  • 100 g thinly sliced salami (I use Golfetta, 3.5 oz)
  • 150 g provolone cheese (mild, 5.3 oz)
  • 1 pinch salt
  • to taste rosemary

Steps to make the SAVORY PANETTONE

  • In a large bowl, break the eggs, add a pinch of salt, the milk, sunflower oil, and yogurt; whisk with a hand whisk until the ingredients are well mixed together.

  • Add the Parmesan, mix well, then start to incorporate the flour (in two or three times) always mixing with the whisk.

    Also add the yeast, make sure to sift it; this will help your savory panettone rise more evenly during baking.

  • Finally, add the cheese cut into cubes, the thinly sliced salami coarsely chopped with a knife, the black olives cut into pieces, and the rosemary coarsely chopped.

    Mix everything with a spoon.

  • Pour the mixture into the panettone mold (high mold 750 g), level it so that the mixture is evenly distributed to the edges of the mold, add some pieces of olives to simulate the visual effect of raisins in sweet panettone, and into the preheated static oven at 350°F in the central rack for about an hour.

    For safety, do the toothpick test, it should come out dry.

    Let it cool slightly, then remove the paper from the mold, and if you like, decorate it by wrapping it with a Christmas ribbon, it will look beautiful…and, I assure you, really super soft and delicious!

Tips and Storage

Your savory panettone will be perfect both warm and at room temperature.

You can prepare it a few hours in advance (I recommend it) or even the day before, storing it in a food bag and lightly heating it before serving.

Of course, you can vary the filling as you like! Any string cheese will do, any deli meat will be perfect. The olives are mostly decorative so if you like them, I recommend keeping them, but you can easily omit them.

In short, get creative; if you want to create a vegetarian version, you can replace the deli meats with, for example, diced zucchini that you sauté in the pan for a few minutes with a little oil, salt, and a clove of garlic.
