Ingredients for making the 7 jar cake

  • 1 jar plain yogurt (4.4 oz)
  • 2 jars all-purpose flour
  • 1 jar cornstarch
  • 2 jars sugar
  • 1 jar extra virgin olive oil
  • 1 packet baking powder
  • 3 eggs
  • 1 pinch salt
  • to taste grated lemon peel
  • 1 tablespoon grated lemon peel

Steps for making the 7 jar cake

  • You will need a jar of yogurt (plain, vanilla, lemon..). Put the yogurt in a bowl. Wash and dry the jar. Use it as a measuring unit. Add 2 jars of sugar to the yogurt. Work with a hand whisk.

  • Break the eggs and add the yolks to the sugar, keeping the egg whites aside. Work the yolks with the yogurt. Incorporate two jars of flour and one of cornstarch. Pour in a jar of extra virgin olive oil and mix again with a hand whisk until a homogeneous mixture is obtained.

  • Whip the egg whites with a pinch of salt to stiff peaks. Incorporate them into the rest of the mixture in two parts, along with the grated lemon peel. Gently mix from bottom to top. Pour into a cake pan lined with parchment paper and bake at 350 °F, static, in the lower-middle area of the oven, for 50 minutes, covering the surface with aluminum foil if it browns too much. Do the toothpick test. Let it cool and serve with powdered sugar.

Storage

Store the cake for three to four days under a glass dome.
