Steps for the preparation of the asparagus omelette

  • Clean the asparagus. Remove the woody end of the stalk. Peel the thicker part of the stalk with the peeler. Then cut them into slices keeping the tips intact. In a pan, pour oil, garlic and sauté the asparagus with salt for about ten minutes. Remove the garlic.

  • Break the eggs into a bowl. Add the grated Parmesan and the cheese chunks. Season with salt and pepper and add the asparagus. Stir quickly. The eggs for the omelette should not be overworked.

  • In a pan, pour a drizzle of oil. Pour the mixture, cover with a lid, and cook the omelette for a few minutes on each side, helping yourself with a lid or a plate to flip it halfway through cooking. You can serve the omelette hot or cold.
