Baked Pasta Casserole

The baked pasta casserole with béchamel and vegetable ragù is one of the recipes I make when I know I won’t be present at lunch or dinner time, so for my family, just a few minutes in the microwave is enough to have a super delicious, cheesy, and flavorful dish. If you like rich dishes, you can also use sautéed mushrooms with garlic and oil, and instead of scamorza, you can use any melting cheese you prefer, such as Asiago or mozzarella if you’re looking for a more delicate taste. Along with pizzaiola trofie, it’s one of the favorite dishes at home.

Ingredients for preparing the baked pasta casserole

  • 1 oz Parmigiano Reggiano
  • 1 tbsp extra virgin olive oil
  • 10 oz short pasta
  • 3.5 tbsp extra virgin olive oil
  • 3.5 tbsp Flour
  • 1 pinch Salt
  • 1 pinch Nutmeg
  • 2 cups milk
  • 7 oz scamorza
  • 7 oz vegetable ragù (click for recipe)

Preparation of the baked pasta casserole


  • In a saucepan, add the oil and the flour all at once and toast it. Slowly add the milk while stirring with a whisk to avoid lumps.
    Keep cooking and stirring until the béchamel sauce coats the spoon.

  • Boil the pasta in plenty of salted water and drain it while it is still very al dente. Mix the béchamel with the vegan ragù and enrich it with scamorza cut into small pieces. Dress the pasta with this rich sauce and pour it into a baking dish where you have added a drizzle of oil.

  • Sprinkle with grated cheese and bake in a preheated oven at 392°F for about 20 minutes.

Storage

The pasta can be prepared a few hours or the day before and then gratinated at the last moment. Once cooked, it keeps for a couple of days in the fridge.
