Steps for preparing baked pasta with pumpkin
Wash the pumpkin, cut it and remove seeds and inner fibers. Steam it until it becomes soft. Take the pulp and mash it with a fork after seasoning with salt and pepper.
Prepare the béchamel by melting the butter in a saucepan. Add the flour, toast it, and add the hot milk. Stir with a whisk. Add salt and nutmeg and cook, stirring constantly, until the béchamel thickens. Enrich it with the mashed pumpkin and stir.
