I enriched it with baked zucchini, but you can use artichokes, sautéed mushrooms, olive pâté, and it really takes just a few minutes. Packed with deli (I use vegan) and cheese, with your favorite cheese, the baked rolled toast has a crispy crust and a melty, soft center that makes it truly irresistible. Make it even more delicious by adding artichokes, mushrooms, or grilled vegetables.

- 5 slices long sandwich bread
- 6 oz vegan deli slices
- 7 oz scamorza cheese (sliced)

- 2 zucchini
- 2 tablespoons breadcrumbs

Preparation of the baked rolled toast
Prepare the zucchini by cutting them into slices not too thin. Place them on a baking tray lined with parchment paper and sprinkled with breadcrumbs. Season with oil, salt, and pepper, and a little breadcrumbs, then bake at 392°F for about 20 minutes.
Roll out the bread with the rolling pin. Take those long strips, but if you can’t find them, you can place one after the other. If you’re using crusted bread, remove it with a knife.
Lay vegan deli slices and cheese (or the ingredients you’ve chosen to fill your toast), zucchini on each slice, and roll them, placing them on a baking tray with the seam side down to prevent them from opening.
Drizzle with extra virgin olive oil and bake in a preheated oven at 392°F for about 10 minutes. Serve the toast hot.
