Steps for preparing the Bread Crown with Brie

  • Begin by placing the crumbled yeast with the sugar, sifted flours, and milk in the mixer. Start working the dough. Add the oil and salt, working until you have a smooth and elastic dough, which you let rise in a bowl, covered, until it doubles in volume.

  • When the dough has doubled, deflate it and divide it in half. Roll each half into two disks. Place the small wheel of brie in the center of the first disk. Cover with the second disk and press it firmly around the cheese. Make cuts in the dough to create a kind of rays. With each obtained section, roll into bread rolls.

  • Brush the rolls with oil. Bake in a preheated oven at 350°F for about 20 minutes. Mix the remaining oil with the chopped parsley.

  • As soon as baked, brush the crown with the oil and parsley.

Storage

The bread crown should be served immediately with the melted cheese, but we can prepare it in advance and just before serving, put it back in a hot oven with the brie.
