Cake with Cream, Jam, and Almonds

The presence of cream keeps the batter super soft while baking, and the acidity of the red fruit jam balances the flavor in every bite. Of course, you can use whatever jam you prefer, whether it’s strawberries, apricots, or a good lemon marmalade, it will always be delicious. Ingredients for the preparation of the cake with cream, jam, and almonds

  • 5 1/4 oz red fruit jam
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 3/4 cups all-purpose flour
  • 2/5 cup sugar
  • Half packet baking powder
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds
  • 2 egg yolks
  • 1 cup milk
  • 1/4 cup cornstarch
  • 2/5 cup sugar

Steps for preparing the cake with cream, jam, and almonds

  • First, prepare the custard. Mix the egg yolks with sugar and flour. Then add the hot milk, flavor with lemon zest, and cook, stirring constantly, until the cream thickens. Place it in a bowl, cover with plastic wrap in contact with the cream, and allow to cool completely. We will need 200 g (approximately 7 oz).

  • Now prepare the cake: beat the eggs with the sugar using a whisk. Gradually add the milk and oil, then the vanilla extract, and finally the sifted flour with the baking powder. Finish with the salt, working until you have a smooth mixture.

  • Line a rectangular baking pan with parchment paper. Pour the mixture in. On the surface, distribute the custard without spreading, then the jam. Cover with the almond slices. Bake in a preheated oven at 350°F (180°C) for 35-40 minutes. Let cool and serve in squares.

Storage

You can store the cake for 2/3 days under a glass dome during the cold seasons, otherwise, keep it in the fridge well covered.
