All you need is a spoon, a bowl, and a pot full of hot oil to make these little bites of goodness, delightful, to be enriched if you like with a handful of raisins soaked in rum, which I omitted because not everyone in my family loves it. The key to a good result for these fritters, and always for a good fry, is to fry in deep, well-heated oil and a seed oil or frying oil that has a higher smoke point than olive oil, which is also somewhat overwhelming in taste.

Ingredients for the preparation of carnival fritters

  • 1 3/4 cups Flour
  • 1 medium egg
  • 1/3 cup Sugar
  • 1/3 cup Milk
  • 2 tablespoons grappa or rum
  • 1 Orange zest
  • 1 pinch Salt
  • Half packet baking powder for sweets
  • 4 1/4 cups frying oil

Preparation of carnival fritters

  • Start preparing the carnival fritters: in a bowl sift the flour with the baking powder and sugar. Separately, lightly beat the egg and milk with a fork. Flavor with rum or grappa. Add the mixture to the flour. Mix well.

  • Flavor the batter with the grated orange zest, making sure it is untreated and well-cleaned. Add a pinch of salt and mix everything together.

  • Heat the oil in a pot. It should reach a temperature of 347°F-356°F. If you don’t have a thermometer, just put a toothpick in the oil, and if bubbles form around it, it’s ready. Using two teaspoons or a spoon and your hands, form balls to drop directly into the oil. Fry for a couple of minutes, they should become golden brown. Drain on paper towels, roll in granulated sugar, and serve.

Storage

You can store the fritters for two or three days under a glass dome.
