Ingredients for preparing the cheesy potato ring

  • 8 potatoes
  • 1/4 cup tomato paste
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • 200 g pizza mozzarella
  • to taste salt and pepper
  • 3 tablespoons extra virgin olive oil

Steps for preparing the cheesy potato ring

  • Wash the potatoes and steam them until they are soft. I cooked them with the skin, but you can remove it. Grease the ring mold and place the soft potatoes. Smash them with the bottom of the glass and then with the spoon.

  • Mix the tomato paste with oil, oregano, and a few tablespoons of water. Spread over the smashed potatoes after seasoning them with salt.

  • Cut the cheese into cubes and enrich the ring. Pour the extra virgin olive oil and bake at 356°F, static, for 30 minutes.

Storage

You can store the ring in the fridge for one day.
