- 5.6 oz Rice
- 7 oz Pumpkin
- 1 onion
- 2 tbsp Butter
- to taste Extra virgin olive oil

Preparation of cheesy rice balls
Slice the onion and sauté it for a few minutes with a drizzle of oil. Add the diced pumpkin (peeled and seeded) and cook, using a little broth to help. When it starts to soften, add the rice. Cook the rice by adding the broth little by little. Adjust the salt, add the butter, stir and let cool. It’s better if you prepare it the day before. You can use any leftover rice you like.
Take small amounts of rice with buttered hands. Spread the rice between your hands, place a cheese cube in the center, and close to form a well-sealed ball.
Roll the obtained rice balls in flour, then dip in beaten eggs with milk, and finally coat with breadcrumbs. Continue until all the rice is used. Fry in plenty of hot oil, drain on absorbent paper. Serve the rice balls hot.
Storage
I advise against storing the rice again. Moreover, the fried food would lose its crispiness.
