Steps for preparing chocolate tiramisu

  • First, prepare the coffee and let it cool. Whip the cream, which needs to be very cold to whip perfectly. Melt the chopped chocolate in a bain-marie, adding a couple of tablespoons of coffee. Let it cool slightly.

  • Mix the yolks with the sugar. I use those in a bottle that are already pasteurized, otherwise, use very fresh eggs or proceed to pasteurization. Add the mascarpone and continue working with electric whisks. Then gently fold in the whipped cream.

  • Combine the slightly cooled chocolate with the mascarpone cream and work with the whisks until a fragrant mousse is obtained. In a baking dish, alternate the coffee-soaked ladyfingers with the mascarpone cream. Continue until all ingredients are used up. Finish with coarsely chopped chocolate and refrigerate for a couple of hours before serving.
