- 3 eggs
- 4.2 oz sugar
- 2 cups all-purpose flour
- 0.4 cups cornstarch
- 1 packet cake yeast
- 0.84 cups fresh liquid cream
- to taste lemon zest
- 1 pinch salt
- to taste extra virgin olive oil
- 1 tablespoon powdered sugar

Steps for the preparation of cream plumcake
In a bowl, break the eggs. Work them with the electric whisks adding the sugar. Beat until they are light and fluffy.
Add the sifted flour, cornstarch, and yeast. Add the fresh cream (not whipped). Flavor with lemon zest and finish with a pinch of salt. Work everything again until you get a homogeneous mixture.
Pour the mixture into a plumcake mold lined with parchment paper. Make a groove in the middle and pour a drizzle of extra virgin olive oil. Place in the oven at 340°F, ventilated, and bake for 35-45 minutes; do a toothpick test to ensure it’s done. Once cooked, let it cool and bring it to the table with powdered sugar.
Storage and variations
You can store the plumcake under a glass dome for two or three days.
