- 2 tbsps diced celery, carrot, and onion
- 3 tbsps Extra virgin olive oil

Preparation of Creamy Pasta with Tomato and Stracchino
Heat the water. Separately, chop the celery, carrot, and onion, and let them soften in a pan with extra virgin olive oil. Add the tomato sauce, salt, and chili pepper. Let reduce for about ten minutes.
Throw in the pasta when the water is boiling and after salting it. Drain it a couple of minutes before it’s done cooking, saving some of its cooking water.
Flavor the pasta with the prepared sauce for a couple of minutes, using the reserved cooking water as needed. Remove from heat, add stracchino and oregano, and after mixing, serve immediately.
Storage
Do not store the pasta, but serve immediately when ready.
