Preparation of the creamy salmon risotto
Finely chop the onion and let it soften for a few minutes with a drizzle of extra virgin olive oil. Add the rice and toast it for a couple of minutes.
Deglaze with white wine over high heat and, once it has evaporated, gradually add the broth, cooking the rice over low heat while stirring often. Remove the rice from the heat, add the butter, let it rest for a couple of minutes, and mix well to make the rice creamy.
Adjust the salt and pepper. Finish with chopped smoked salmon and parsley, giving it one last stir before serving.
Storage
This risotto should be consumed immediately after cooking, so I do not recommend storing it.
