Steps for preparing the crepes bundles with stracchino and mushrooms

  • Prepare the crepes. In a tall container, put the milk. Add the eggs, melted butter, flour, lemon zest, and a pinch of salt. Blend with an immersion blender until you get a smooth batter. Pour small amounts of batter into a non-stick pan and, by rotating it, spread it over the entire bottom. Cook for a few minutes on both sides. Continue until you get 10-12 crepes.

  • Prepare the béchamel sauce. In a baking dish, toast the flour with the butter. Gradually add the milk, stirring constantly. Add salt and nutmeg and cook, still stirring, until the béchamel sauce thickens.

  • In a bowl, put the diced asiago, stracchino, and mushrooms. Mix well. In the center of each crepe, place a generous spoonful of the stracchino mixture. Close two edges first, then the other two to form the bundles.

  • Place the crepes on a baking sheet lined with parchment paper. Cover them with a bit of béchamel and some grated cheese. Add small pieces of butter and bake at 350°F for 20-30 minutes. Serve at the table.
