- 4 cups All-purpose flour

Making Dad’s Ring Cake
Beat the eggs with the sugar until they are pale and very frothy. Add the sifted flour with the baking powder, alternating with the milk and the melted, cooled butter.
Mix very well and finish with the grated lemon zest (or a teaspoon of vanilla extract) and the salt. Work the mixture until smooth, adding a little milk if too firm.
Pour into a greased ring cake pan and bake in a static oven at 350°F for about 40 minutes, testing with a toothpick. Let cool before removing from the pan and serve with powdered sugar.
