The delicious and gooey piadipizza is a flatbread that we fill with tomato sauce, mozzarella, and basil (or oregano) to enjoy pizza even when the heat is intense, and baking pizza in the oven is really impossible. I filled my piadipizza with mozzarella and tomato, but we can easily fill it with our preferred cheese, or even with cold cuts or vegetables if we like a richer and more indulgent piadipizza.

Ingredients for the Delicious and Gooey Piadipizza
- 1 pinch instant yeast for savory dishes
- 200 g type 00 flour
- 200 g Manitoba flour
- 20 g extra virgin olive oil
- 200 ml Water
- 8 g Salt
- 300 g Tomato sauce
- to taste oregano
- 2 cloves garlic
- 1 pinch salt
- 2 tablespoons extra virgin olive oil
- 400 g mozzarella

Preparation of the Delicious and Gooey Piadipizza
Put the sifted flours in a bowl. Add water, salt, and the yeast for savory pies, the oil, and work the dough first in the bowl, then on the work surface until you have a smooth dough. Cover with the bowl and let it rest for 30 minutes.
After the resting time, divide the dough into 6 pieces. Round the pieces and let them rest for 10 minutes. Roll them out as thin as possible and cook them in a non-stick pan with a drizzle of oil, a few minutes per side.
In a pan, put garlic and oil. Add the tomato sauce, salt, and let it reduce for 10-20 minutes.
Spread some tomato sauce on each piada, oregano, and add mozzarella cubes. Put in the oven at 392°F until the mozzarella has melted. Serve the piadipizzas very hot.

You can store the flatbreads wrapped in plastic wrap for a couple of days. However, I recommend seasoning them just before serving.
