Eggplant Sandwiches

A rich and tasty dish, eggplant sandwiches are super delicious. You can fill them with mozzarella or your choice of stringy cheese, making them an irresistible main course. I baked the eggplants with breadcrumbs, but the dish also works great with grilled eggplants, or if you’re a super foodie, even fried. If you love eggplants, try them in a delicious savory pie!

Let’s get to work and try eggplant sandwiches together.

  • In a bowl, mix the tomato sauce with salt, oil, and oregano. Place 4 eggplant slices on the tray. Add tomato sauce to each slice. Enrich with thinly sliced mozzarella and cover with another 4 eggplant slices. Repeat these layers making 3 or 4 stacks.
