Ingredients for the preparation of extra virgin olive oil cookies

  • 2 cups type 1 flour
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/3 cup sugar
  • 3 1/2 tablespoons extra virgin olive oil
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract

Steps for the preparation of extra virgin olive oil cookies

  • In a bowl, sift the flour with the baking powder. Add the eggs and start mixing with a fork.

  • Add oil, sugar, vanilla extract, lemon extract (or grated lemon zest), a pinch of salt, and knead first in the bowl and then on the work surface.

  • Form a long sausage shape, wrap with plastic wrap, and place in the fridge for at least 30 minutes. After resting, roll the sausage in powdered sugar and cut it into 24 slices. If they lose shape during cutting, round them with your hands.

  • Place the cookies on a baking tray covered with parchment paper, bake at 356°F, static, for 15-20 minutes. Let them cool completely and serve with powdered sugar.

Storage

Store the cookies for a few days inside a tin box.
