Steps for preparing the farro salad with zucchini and mozzarella
Rinse the farro under plenty of running water. Then boil it in salted water following the package instructions. I cook it in a pressure cooker to halve the time. Drain and pour it into a bowl. Dress it with extra virgin olive oil and let it cool.
Place the eggs in cold water in a small pot. Put on the heat and cook for 8 minutes from when the water starts to boil. After that time, immediately submerge them in cold water to stop the cooking, then peel and cut into pieces.
Chop half an onion and sauté it in a pan with a drizzle of oil. Add the zucchini after cutting them into cubes. Salt and cook for about ten minutes. Let cool. Cut the mozzarella into cubes.
Mix the farro with zucchini, mozzarella, and eggs. Scent with basil and grated lemon zest. Let rest for half an hour and serve.
