Have you ever tried fennel cordon bleu? They are a delicious and easy-to-prepare main course, cooked in the oven or air fryer, tasty and everyone will like them. Thanks to the breading, a crispy crust is created with a soft and stringy inside. If you like fennel, try baked fennel. Other delicious fennel recipes to try are fennel pizzaiola or try cauliflower with gratinated fennel. If you like vegetable main courses, try eggplant pizzas or my version of zucchini parmigiana. As always, for my fennel cordon bleu, I used vegan cold cuts and sliced scamorza cheese, which is easier to use. Let’s get to work and prepare the fennel cordon bleu together!

Ingredients for preparing fennel cordon bleu
- 2 fennels
- 2 eggs
- to taste salt and pepper
- 1.25 cups all-purpose flour
- 1.5 cups breadcrumbs
- 3.5 oz sliced cold cuts (vegetable)
- 3.5 oz sliced cheese (scamorza)
- to taste extra virgin olive oil
- 0.7 oz grated Parmesan

Steps for preparing fennel cordon bleu
Preparing these cordon bleu is very simple. Clean the fennels by removing the green part and the base (not too much to avoid it falling apart when slicing the fennel). Also remove, if damaged, the outer part if damaged. Then cut them into thin slices, but not too thin.
Break the eggs and mix them with salt and pepper. On some slices (I recommend not using the outermost part of the fennel) place cheese and cold cuts. Cover with another fennel slice. Pass the cordon bleu in flour, then in the egg and breadcrumbs after enriching it with Parmesan.
Place the cordon bleu on a baking sheet covered with parchment paper. Drizzle with extra virgin olive oil and bake in a fan oven at 356°F for about 25 minutes. You can also cook them in an air fryer at 356°F for 20 minutes.
You can prepare them already breaded the day before and store them in the fridge, then cook them at the last minute to maintain a crispy breading.
