Ingredients for Preparing the Zucchini and Tomato Bundles

  • 4 flatbreads without lard (thin and soft)
  • 4 zucchini
  • Half onion
  • to taste salt and pepper
  • 4 tablespoons extra virgin olive oil
  • 2 tomatoes
  • 12 slices cheese

Steps

  • Chop the onion and cook it in a pan with extra virgin olive oil and a drop of water. Wash and trim the zucchini. Grate them with a coarse grater. Add to the onion with salt, pepper and cook for about ten minutes over low heat with salt and pepper.

  • Slice the tomatoes. Place the cheese slices in the center of the flatbreads. Top with zucchini and then tomato slices.

  • Fold the top and bottom sides inward, then the two lateral sides. Cook the flatbread in a pan with a drizzle of oil for a couple of minutes on each side. Delicious hot and melted or cold to take for lunches or dinners out.

Storage and Variations

You can store the flatbread in the refrigerator for one day wrapped in cling film.
