The pancake recipe is extremely simple, although cooking takes a bit of time and patience. They are pancakes without butter in the mixture; they are then cooked with a small piece of butter, but of course, you can opt for oil if you prefer. You can enrich them after cooking with some nuts, maple syrup, or chocolate cream. If you love pancakes, try the apple pancakes, the chocolate heart pancakes, or the super quick jar pancakes.

Ingredients for Preparing Fluffy Pancakes

  • 2 eggs
  • 2 tbsp milk
  • 1/3 cup all-purpose flour
  • 2 tbsp sugar
  • 1/4 tsp baking powder
  • as needed vanilla extract
  • 1 tbsp butter (for cooking)
  • as needed fresh fruit
  • as needed maple syrup

Steps to Prepare the Fluffy Pancakes Recipe

  • Separate the egg yolks from the egg whites. Mix the yolks with the milk, sifted flour, baking powder, and vanilla (but you can also scent with grated organic orange or lemon zest). Mix everything with a hand whisk.

  • Beat the egg whites until very stiff, gradually adding the sugar. Then incorporate into the yolk mixture, folding gently from bottom to top to prevent deflating the egg whites.

  • Brush a pan with butter or oil. With this mixture, you can make 4 pancakes, so put 1/4 of the mixture per pancake using a spoon. Add a bit of water, a few drops, ensuring it does not touch the pancakes and cover with a lid. Cook for a few minutes per side with the lid on very low heat. I cooked for 5 minutes, flipped the pancakes, added a few drops of water, covered again, and cooked for another 5 minutes. Flip again to check the cooking.

  • Serve garnished with whatever you like best, I used fresh fruit and maple syrup.

Storage

You can store them for a couple of days covered with plastic wrap.
