- 6 eggs
- 2 cloves garlic
- 2 zucchini
- 3 tbsp extra virgin olive oil

Steps to prepare the folded frittata with zucchini and cheese
Prepare the zucchini. Wash them and cut into chunks. Put two cloves of garlic in a pan with a drizzle of oil. Add the zucchini, salt and pepper and cook for a few minutes; they should still remain slightly crunchy. Remove the garlic.
Break the eggs. Beat them quickly with salt and pepper. Pour a little oil into a pan. Add the eggs, cover with a lid and cook for a few minutes.
Place the slices of cheese on half of the frittata, then fold it. Cover again and cook over low heat until the cheese melts. Serve immediately.
Storage
You can store the frittata in the fridge for a couple of days.
